Philly Style Cheese-Steak Toastie

with Nacho Cheese Dipping Sauce

Introduction

This is nothing but a filthy treat and should not be attempted on a diet!

The recipe combines, steak onions, peppers and black garlic with oozy cheese sauce and tastes divine. The nacho cheese element usually leaves a bit over and I like to throw this on some crunchy French fries with crispy bacon bits to make loaded fries.

It does take a bit of work to prepare but believe me its worth the wait. The secret really is not to rush it! Take your time to make every element and then combine them to make a showstopping sandwich of which even the folks in Philly would be proud of - Enjoy!!!

Large Frying Pan - Preferably cast iron (You could if you have one use a toastie or panini press)
Medium Sized Pan

Ingredients

For the Toastie:

  • 1 x medium onion (Thinly sliced)
  • 1 x dash of balsamic vinegar
  • 1 x tsp brown sugar
  • 1 x green bell pepper (Sliced)
  • 400g steak (Any steak will work but I like a good sirloin or bavette)
  • 1 x tbsp Black Garlic Paste
  • 50g Gruyere Cheese
  • 75g Cheddar Cheese
  • 4 x slices of sourdough or toasting bread
  • 75g Softened Butter
  • 1/2 Tsp Garlic Powder
  • Salt and pepper for seasoning
  • 3 x tbsp Olive oil

For the nacho cheese dipping sauce

  • 40g plain flour
  • 40g butter
  • 450 ml of whole milk
  • 75g cheddar
  • 75g gruyere
  • 4 American cheese slices (Burger Cheese)
  • 1 tbsp Jalapeno Pickling liquor (Optional)

Method

  • Season your steak with 1 tbsp of olive oil, salt, pepper and leave to marinate.
  • Melt the butter in a saucepan over a medium heat then stir in the plain flour to make a roux. Cook out the mixture for about 1 minute whisking constantly. Then slowly add in the milk a little at a time stirring as you go. The mixture will go lumpy at first but continue whisking and the lumps will go. Once you have a smooth mixture (this should take 3 - 4 mins) add in the cheddar, gruyere and American cheese. Reduce to a medium-low heat and cook stirring until the cheese has fully melted and the sauce has thickened. If using stir in the jalapeno pickling liquor for an extra hit of flavour. Set aside whilst you prepare the rest of the sandwich.
  • Cook your steak on a high heat to your liking. I like mine medium rare which is about 2 - 3 mins on each side. Remove from the heat, cover with foil and leave to rest.
  • Fry your onions, balsamic vinegar and brown sugar over a medium heat in a frying pan until caramelised for about 7 minutes. Add in the green bell peppers and cook for a further 5 mins.
  • Mix the garlic powder and butter together and spread liberally on one side of each of the slices of bread. On 2 of the slices spread the black garlic paste. Slice your steak and pile onto 2 of the slices of bread with the garlic paste. Divide your onion and pepper mixture between the 2 pieces and load on the cheddar and gruyere cheese. Top with the other piece of bread.
  • In a dry frying pan over a medium heat, gently fry the sandwiches until golden brown and crispy. Warm through the nacho cheese mix. Serve and enjoy!
